豆豉蒸小排

                              在茶樓裡常會點的蒸小排

                              或是豉汁小排飯,它的味道真讓人垂涎不已   . . .  





                          

 

                           新鮮小排用清水持續沖十分鐘去血水後瀝乾

                           加入醬油一大匙,鹽適量和冰糖少許,白蘭地一大匙醃30分鐘

                           碗裡準備豆豉兩大匙切碎,蒜末 蔥末 薑末適量,乾辣椒末少許

                           將一大匙的橄欖油加熱後倒進來靜置一下

 

                           小排用少許的太白粉抓過加上泡過油的豆豉蔥薑蒜辣椒末

                           拌勻後置電鍋蒸熟 ( 外鍋一杯水  )

 

                          

 

                         

 

                          

 

 

                                    湯汁拿來淋白飯真是又油又香啊  . . . . .
